Ingredients

  • 2 ripe peaches, sliced
  • 1/3 cup granulated sugar
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 teaspoons vanilla extract
  • 1 heaping tablespoon loose-leaf black tea (I used Mark T. Wendell's Russian Caravan tea blend)
  • 18.6 ounces of boiling water
  • Ice
  • Fresh mint, for garnish
  • Lemon slices, for garnish

Instructions

  1. Brew the tea as directed and let it steep for about 5 minutes. Remove the tea leaves and let the tea cool to room temperature.
  2. In a small bowl, mix sugar and lemon zest until combined. Set aside.
  3. In a bullet blender, combine peaches, lemon sugar, vanilla, lemon juice, and a splash of brewed tea. Blitz until smooth and creamy.
  4. In a pitcher with ice, pour the pureed peaches and top with cooled tea. Stir to blend and garnish.
  5. Serve chilled over more ice and enjoy!
