- 2 ripe peaches, sliced
- 1/3 cup granulated sugar
- Zest of 1 lemon
- Juice of 1 lemon
- 2 teaspoons vanilla extract
- 1 heaping tablespoon loose-leaf black tea (I used Mark T. Wendell's Russian Caravan tea blend)
- 18.6 ounces of boiling water
- Ice
- Fresh mint, for garnish
- Lemon slices, for garnish
Instructions
- Brew the tea as directed and let it steep for about 5 minutes. Remove the tea leaves and let the tea cool to room temperature.
- In a small bowl, mix sugar and lemon zest until combined. Set aside.
- In a bullet blender, combine peaches, lemon sugar, vanilla, lemon juice, and a splash of brewed tea. Blitz until smooth and creamy.
- In a pitcher with ice, pour the pureed peaches and top with cooled tea. Stir to blend and garnish.
- Serve chilled over more ice and enjoy!
