Ingredients

For the dark chocolate bars:

  • 1 1/2 cups high-quality dark chocolate
  • Zest of 1/2 orange
  • 1/3 cup almonds, finely chopped
  • 1/3 cup dried apricots, chopped
  • Pinch of coarse sea salt

For the white chocolate bars:

  • 1 1/2 cups high-quality white chocolate
  • 1/3 cup freeze-dried strawberries, chopped
  • 1/3 cup toasted coconut flakes

Equipment:

  • 4 silicone candy bar molds

Instructions

  • In a double boiler, melt the dark chocolate until smooth.
  • Sprinkle the bottom of the silicone molds with almonds, apricots, and orange zest. Pour the chocolate into the molds. Sprinkle with additional chopped almonds and apricots, and a light sprinkle of coarse sea salt.
  • Gently tap the mold on a flat surface to get the air pockets out and level the chocolate. Set aside on a tray.
  • Repeat this process for the white chocolate, and be sure to use a separate bowl for melting the chocolate.
  • Sprinkle the bottom of the silicone molds with toasted coconut and strawberries. Pour the white chocolate into each mold and top with the coconut and strawberries. Gently tap on a flat surface and place on the tray with the dark chocolate molds.
  • Transfer the chocolate bars to the refrigerator and let them set for at least one hour.
  • Store in an airtight container in a cool, dry place for prolonged freshness.
