Ingredients
- 1 lb. 80/20 pork sausage
- 1 tablespoon dark brown sugar or maple syrup
- 1 large clove of garlic, grated
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon fennel seeds
- 1 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried sage
Instructions
- Begin by crushing the herbs with a mortar and pestle. I ground the fennel seeds with the oregano, rosemary, and sage. Set aside.
- In a large bowl, combine ground pork, brown sugar and garlic. Mix to combine.
- Add the spices and herbs. Mix well by hand until everything is combined.
- Shape the ground pork into breakfast patties, about 2 tablespoons worth should be enough.
- Heat a large cast iron pan over medium-high heat.
- Cook the sausage patties until golden, about 3-4 minutes on each side.
- Serve and enjoy!
Notes
Store the cooked sausage patties in an airtight container for up to 3-4 days. If you wish to freeze the cooked patties, let them cool to room temp then wrap them individually in clingfilm. Store in a freezer bag until ready to use.
