Homemade Breakfast Sausage

Ingredients

  • 1 lb. 80/20 pork sausage
  • 1 tablespoon dark brown sugar or maple syrup
  • 1 large clove of garlic, grated
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried sage

Instructions

  1. Begin by crushing the herbs with a mortar and pestle.  I ground the fennel seeds with the oregano, rosemary, and sage.  Set aside.
  2. In a large bowl, combine ground pork, brown sugar and garlic.  Mix to combine.
  3. Add the spices and herbs. Mix well by hand until everything is combined.
  4. Shape the ground pork into breakfast patties, about 2 tablespoons worth should be enough.
  5. Heat a large cast iron pan over medium-high heat.
  6. Cook the sausage patties until golden, about 3-4 minutes on each side.
  7. Serve and enjoy!

Notes

Store the cooked sausage patties in an airtight container for up to 3-4 days.  If you wish to freeze the cooked patties, let them cool to room temp then wrap them individually in clingfilm.  Store in a freezer bag until ready to use.
