Ingredients

  • 2 yellow onions, sliced thin
  • 1 tsp. sugar
  • 1 1/2 tsp. salt
  • 1 tsp. coarse black pepper
  • 1/2 cup shredded Parmesan cheese
  • 3-4 tsp. fresh parsley
  • 1/2 cup flour
  • 1 cup panko
  • 1/2 cup milk, plus 1 tbs. water
  • 1 egg
  • Vegetable oil for frying

Instructions

  1. Heat a medium-sized cast iron frying pan.
  2. Place the sliced onions in the heated pan and sprinkle with a teaspoon of sugar and ½ teaspoon of salt.
  3. Allow the onions to become soft and golden.  Remove and let cool slightly before transferring them to a large bowl.
  4. Add the shredded cheese, flour, salt, pepper, parsley, breadcrumbs, milk, water and egg into the bowl with the cooked onion and mix.
  5. Heat a large cast iron frying pan with about ¼-inch of vegetable oil and using a teaspoon, spoon the batter into the pan and gently flatten.
  6. Do NOT overcrowd the pan.  Let each fritter cook for about 2-3 minutes on each side.
  7. Place the cooked fritters on a platter lined with paper towels.
  8. Serve with your favorite dipping sauce.  I served mine with sour cream and chives. Enjoy!
