Ingredients

Units Scale
  • 2.5 lbs. of ground beef
  • 2 cups of fresh white bread, cubed
  • 1 cup of breadcrumbs
  • 1 grilled red bell pepper, chopped
  • 1/2 cup milk
  • 1/2 cup grated Parmesan or Romano cheese
  • 3/4-1 cup of shredded mozzarella
  • 1 tsp. salt
  • 1 tsp. coarse ground black pepper
  • 2 cups fresh baby spinach, lightly sauteed
  • 6-7 cloves of fresh garlic, grilled in its skin
  • 3 eggs
  • 3-4 tbs. olive oil

For the topping:

  • 1/2 cup ketchup
  • 3 tbs. honey
  • 1/2 cup grated Parmesan Cheese of Romano
  • Black pepper

Instructions

  1. Preheat Oven 350 degrees F. and place the parchment paper in a large cast iron frying pan.
  2. Carefully, grill the bell pepper in its skin, over an open flame or in a cast iron frying pan until the skin is charred.  Allow the pepper to cool, gently scrape the skin off, remove the seeds, and slice and chop the pepper—place in a large bowl.
  3. Heat a medium cast iron pan with 1 tbs. of olive oil add the fresh spinach and toss until wilted.  Allow the spinach to cool before adding to the mixture.
  4. Grill the garlic, in its skin, in a small, dry cast iron frying pan.  Allow the garlic to cool, then remove from its skin and chop.  Add the garlic to the bowl with the chopped bell pepper.
  5. Cube fresh bread and add to bell pepper and garlic.
  6. Add the bread crumbs, milk, eggs, grated Parmesan or Romano, shredded mozzarella, 2 tablespoons olive oil, salt and black pepper.
  7. Add the ground beef to the mixture and form into a large loaf shape.  Set aside.
  8. In a small bowl, prepare the topping by combining the honey with ketchup and smooth over the meatloaf.
  9. Sprinkle grated Parmesan or Romano cheese and cracked black pepper over the top of the meatloaf.
  10. Cook for 15 minutes per pound or until desired doneness is achieved.
