Ingredients

  • 3 ripe bananas, cut into pieces
  • 2 ripe pears, diced
  • 2 cups flour
  • 1/2 cup raisins, chopped
  • 1/2 cup walnuts, chopped
  • 1 cup sugar
  • 1/2 cup butter, softened and diced
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 3 tsp. baking powder
  • 3 tsp. vanilla
  • 3 eggs
  • 1/2 tsp. ginger
  • 1/2 tsp. cloves
  • 1/2 tsp. cinnamon

For the topping:

  • 1 tsp. butter
  • 1/4 cup walnuts, chopped
  • 2 tsp. sugar

Instructions

For the topping:

  1. Heat a small cast iron frying pan with the tsp. of butter.
  2. Stir in the walnuts and sugar to coat the walnuts.  Turn the heat off immediately and let cool a bit.  Set aside.

For the cake:

  1. Preheat oven 350 F.
  2. Place the banana pieces, diced pears, eggs, softened butter and vanilla in a large bowl and mash.
  3. Add the flour, baking powder, baking soda, salt, sugar and stir.
  4. Next, fold in the the raisins, chopped walnuts, cinnamon, ginger and cloves.
  5. Prepare a bundt pan with butter and dusted with flour.
  6. Add the batter evenly to the pan and sprinkle with the prepared topping.
  7. Bake 45 minutes or until the toothpick test comes out clean.
  8. Let the cake cool on wire-rack before trying to remove the cake from the pan.
