Simple Fresh Tomato Bruschetta

Ingredients

  • Sliced Italian bread or ciabatta
  • 1 bulb roasted garlic, mashed
  • 4 vine ripe tomatoes (or any variety), chopped
  • 1/2 small red onion, finely chopped
  • Handful of fresh basil, finely chopped
  • 1/4 cup grated Parmesan cheese, plus more for sprinkling
  • Salt and black pepper, to taste
  • 2 teaspoons dried (or fresh) oregano
  • Extra Virgin Olive Oil

Instructions

  1. Begin by lining your sliced bread on a baking sheet and drizzle each slice with olive oil.  Toast until golden, about 12 minutes at 375 degrees F.
  2. In a bowl combine together, chopped tomato, onion, Parmesan, and mashed garlic cloves. Season with salt, pepper, basil, and oregano.  Drizzle with olive oil and toss together.
  3. Spoon the tomato mixture on the toasted bread.  Sprinkle with extra Parmesan and a drizzle of olive oil.  Serve and enjoy!
