Ingredients
- 4 1/4 lb. bone-in leg of lamb
For the Rub:
- 3 tbs. fresh lemon juice
- 3 tbs. olive oil
- 4-5 cloves of garlic
- 2 tsp. salt
- 2 tsp. dried oregano
- 2 tsp. black pepper
Instructions
- Combine all of the ingredients for the rub in a bullet of a food processor and process.
- Score the fat part of the lamb, about a 1/4-inch deep, and rub the mixture all over the lamb.
- Preheat Oven to 350 degrees F.
- Place the lamb in the oven for about 20 minutes per pound timing. Time the cooking time a little less, such as 18 minutes per pound for a less well-done lamb.
- Let the cooked lamb rest for about 15 minutes before slicing.
