Ingredients
- 1 head of broccoli, cut into florets
- 1 head of cauliflower, cut into florets
- 15 oz. can of butter beans, rinsed and drained
- 1 red onion, sliced very thin
- 1 red bell pepper, sliced thin
- 1 1/2 tsps. salt
- 1 1/2 tsps. fresh ground black pepper
- 1 1/2 tsps. sugar
- 1/4 cup of olive oil
- juice of 1 lemon
Instructions
- Bring a large pot of salted water to a boil. Carefully, add the broccoli and cauliflower to the water and boil for about 3 minutes depending on the size of the florets. Drain the florets in a colander then quickly rinse in cold water and let drain in the colander.
- Place in a large bowl and add the sliced onion, bell pepper, beans, and seasonings.
- Add the olive oil and lemon juice and toss.
- Taste for seasonings.
- Refrigerate until ready to use.
