Caramelized Onion Meatloaf

Ingredients

Units Scale
  • 2 lbs. ground beef
  • 1 large sweet onion, sliced thin
  • 1 tsp. sugar 1/2 tsp. salt
  • 1/2 tsp. course ground black pepper
  • 1/2 tsp. garlic powder
  • 3 - 4 tbs. fresh Italian parsley, chopped
  • 2 eggs
  • 1/2 cup bread crumbs, plain or flavored is fine
  • 1/4 cup fresh grated Parmesan cheese or Romano cheese
  • 1/4 cup Ketchup
  • Parchment paper for lining the pan

For the Toppings:

  • 1 sweet onion, sliced
  • 1/2 cup ketchup
  • 1 tsp. Balsamic vinegar
  • 1/2 tsp. course ground black pepper
  • 1/2 tsp. salt
  • 1 tsp. sugar
  • 1 tsp. garlic powder
  • 1/4 cup fresh grated Parmesan cheese or Romano cheese

Instructions

For the toppings: 

  1. Place the ketchup in a small bowl; add the salt, sugar, garlic powder, black pepper, and balsamic vinegar and stir.  Set aside.
  2. Heat a large cast iron frying pan and place the sliced onion in the dry heated pan.  Sprinkle with 1/4 tsp. of sugar.
  3. Allow the onion to get a beautiful golden color tossing gently.  Set aside.

For the meatloaf:

  1. Preheat oven to 350 degrees F.
  2. Heat a large cast iron frying pan and place the sliced onion in the dry heated pan.
  3. Sprinkle the onions with the sugar, salt, garlic powder, and ground black pepper.
  4. Allow the onions to become a beautiful golden color.
  5. Turn the heat off and gently cool.
  6. In a large bowl, combine the eggs, bread crumbs, ketchup, grated cheese, and ground beef; add the cooled onions and mix gently.  Be sure not to overmix!
  7. Form into a loaf shape and place in a large cast iron frying pan lined with parchment paper.
  8. Place the prepared grilled onion topping over the formed meatloaf and smooth the ketchup mixture over the top of the onion.
  9. Finish off with the grated cheese and place in the oven.
  10. Bake for 55 - 60 minutes.  Allow the meatloaf to rest for about 10 minutes or so before slicing.
