Feta and Scallion Burgers

Ingredients

  • 1 1/2 to 1 3/4 lb. ground beef
  • 2 tbs. fresh Italian parsley, chopped
  • 1/2 tsp. ground black pepper
  • 1/2 tsp. salt
  • 1/2 tsp. Korean red pepper flakes
  • 1 cup of crumbled feta cheese
  • 3-4 scallions, chopped
  • 1 large clove of garlic, grated
  • 1 tbs. soy sauce
  • 1 1/2 tsp. sesame oil
  • 1 tbs. olive oil
  • 1 pat of butter

Instructions

  1. Place the ground beef in a large bowl.
  2. Add the parsley, seasonings, feta, scallions soy sauce, and sesame oil.  Mix gently a few times to incorporate the ingredients.
  3. Gently form into the desired size burgers.
  4. Heat a large cast iron pan with a pat of butter and olive oil.
  5. Place the burgers in the pan.  Do not overcrowd the pan.
  6. Generally, for a medium rare burger, the cooking time is  3 - 4 minutes per side.
  7. The cooking time depends on the size of the burger.  Cook the burger on a medium-high heat and do not cover the pan.  That will steam it and make it soggy.  If the burger feels firm it is well done, the softer the burger to a gentle touch the less done the burger is.
  8. Serve with your favorite condiments and rolls.
