Caper and Garlic Salad Dressing

Ingredients

Scale
  • 2 tbs. capers, not drained
  • 6 tbs. olive oil
  • 4 large cloves of garlic, grilled
  • 4 tbs. apple cider vinegar
  • 2 tbs. of Parmesan or Romano cheese, grated
  • 1/4 tsp. salt
  • 1/4 tsp. coarse black pepper
  • 2 tbs. honey

Instructions

  1. Place the garlic cloves in the skin in a small, dry, cast iron frying pan.  Allow the garlic cloves to become a bit charred.  Let the garlic cool and then pop out of the skin.
  2. Combine all of the ingredients for the dressing in a food processor and process.  The mixture will remain a bit coarse.
  3. Prepare a salad to serve with the dressing.
  4. Serve with flatbreads.
