Ingredients
- 2 tbs. capers, not drained
- 6 tbs. olive oil
- 4 large cloves of garlic, grilled
- 4 tbs. apple cider vinegar
- 2 tbs. of Parmesan or Romano cheese, grated
- 1/4 tsp. salt
- 1/4 tsp. coarse black pepper
- 2 tbs. honey
Instructions
- Place the garlic cloves in the skin in a small, dry, cast iron frying pan. Allow the garlic cloves to become a bit charred. Let the garlic cool and then pop out of the skin.
- Combine all of the ingredients for the dressing in a food processor and process. The mixture will remain a bit coarse.
- Prepare a salad to serve with the dressing.
- Serve with flatbreads.
