Feta and Cream Cheese Dip

Ingredients

  • 1/2 cup of cream cheese
  • 1 cup of crumbled feta cheese
  • 4 medium to large cloves of garlic - gently grilled in the skin
  • 1/2 tsp. coarse black pepper
  • 1/4 tsp. salt
  • 3 tbs. of olive oil
  • 4 tsp. of fresh lemon juice
  • Garnish with a small drizzle of olive oil
  • Garnish with dashes of fresh ground black pepper

Instructions

  1. Serve with your favorite veggies and/or crackers
  2. Heat a small cast iron frying pan and place the fresh garlic, in the skin, in the frying pan.  Grill until the skin becomes slightly charred.  Let the garlic cool a bit, then pop out of the skin.
  3. In a food processor combine the cream cheese, feta cheese, grilled garlic, black pepper, lemon juice, salt, and olive oil.  Process until creamy.
  4. Serve with a delicate drizzle of olive oil and fresh ground black pepper.
