Ingredients
- 1 3/4 lbs. of salmon filet
- parchment paper
- Fresh scallions
- Fresh basil
For the Marinade:
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 3 cloves of garlic - crushed or pressed
- 1 tbs. brown sugar
- 2 tbs. honey
- 1 tbs. chopped fresh basil or Italian parsley
- 1 tbs. olive oil
- 1 tbs. sesame oil
- 3 tsps. fresh lemon juice
Instructions
- Combine all of the ingredients for the rub in a small bowl and mix.
- Taste for seasonings.
- Place the salmon in a bowl and massage with the marinade.
- Place in the refrigerator for at least one hour or several.
- Line a cast iron frying pan with the parchment paper and place the salmon in the pan.
- Place on the stove over a medium heat and cover with another pan or tin foil.
- Cook for about 12 - 15 minutes or until the thickest part of the salmon reaches 135 degrees F.
- Garnish with fresh basil and scallions.
