Shrimp with BBQ Cocktail Sauce

Ingredients

Units Scale
  • 2 lbs. uncooked shrimp - medium to large size with tail on
  • Ice

For the brine:

  • 3 quarts of water
  • 1 tbs. salt
  • 2 bay leaves
  • 1 slice of lemon

For the BBQ Cocktail Sauce:

  • 2 tbs. Andria's Barbecue Sauce
  • 1 tsp. horseradish
  • 1 tsp. chili paste
  • 1 tsp. lemon juice

Instructions

  1. Place the salt, bay leaves and lemon slice or slices in the water and bring to a boil.
  2. Place the shrimp in the water and let cook for about 2 minutes or until opaque.
  3. Place the cooked shrimp on an ice bath to stop the cooking process and assure perfectly cooked shrimp.
  4. Combine the ingredients for the cocktail sauce in a small bowl and mix. To make more just double or triple the ingredients, depending on the amount of shrimp being served.
  5. Serve the shrimp on your desired platter over shaved ice with the cocktail sauce and extra lemon wedges.
