Spicy Korean Chicken Noodle Stew

Ingredients

  • 1 1/2 - 2 lbs. bone-in chicken thighs
  • 1 large sweet onion, sliced
  • 1 small head of garlic, crushed
  • 2 inch piece of fresh ginger, minced
  • 4 scallions, chopped
  • About 10 dried shiitake mushrooms, soaked and chopped
  • 2 tsp. fish sauce
  • 2 tsp. sugar
  • 2 tsp. salt
  • 2 tsp. fresh ground black pepper
  • 2 tsp. gogucharu (Korean red pepper flakes)
  • 3 - 4 cups water
  • Fresh scallions, for garnish
  • Chili crisp, for garnish
  • Crumbled dried seaweed, for garnish
  • Noodles or rice of your choice

Instructions

  1. Heat a sauce pot and place the chicken thighs, sliced onions, garlic, scallions and ginger.
  2. Allow the onions to soften and get a slight golden.
  3. Add the water, seasonings and mushrooms.
  4. Simmer on a low heat for 45 minutes to 1 hour or until the chicken is cooked through.
  5. Taste for seasonings.
  6. Shred the chicken if desired.
  7. Serve with cooked rice or ramen noodles or noodles of your choice.
