Ingredients
- 1 1/2 - 2 lbs. bone-in chicken thighs
- 1 large sweet onion, sliced
- 1 small head of garlic, crushed
- 2 inch piece of fresh ginger, minced
- 4 scallions, chopped
- About 10 dried shiitake mushrooms, soaked and chopped
- 2 tsp. fish sauce
- 2 tsp. sugar
- 2 tsp. salt
- 2 tsp. fresh ground black pepper
- 2 tsp. gogucharu (Korean red pepper flakes)
- 3 - 4 cups water
- Fresh scallions, for garnish
- Chili crisp, for garnish
- Crumbled dried seaweed, for garnish
- Noodles or rice of your choice
Instructions
- Heat a sauce pot and place the chicken thighs, sliced onions, garlic, scallions and ginger.
- Allow the onions to soften and get a slight golden.
- Add the water, seasonings and mushrooms.
- Simmer on a low heat for 45 minutes to 1 hour or until the chicken is cooked through.
- Taste for seasonings.
- Shred the chicken if desired.
- Serve with cooked rice or ramen noodles or noodles of your choice.
