Ingredients

  • 1/2 cup unsalted butter
  • 3/4 cups white sugar
  • 1/2 cup dark brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 3/4 cup AP flour
  • 1/2 cup almond flour
  • 1/4 teaspoon cardamom
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 cup old-fashioned rolled oats
  • 3/4 cup raisins

Instructions

  • Preheat oven to 350 degrees F.  Line two cookie sheets with parchment paper and set aside.
  • In the bowl of your stand mixer, beat butter and sugars until smooth and whipped.
  • Add eggs and vanilla.  Beat again until well incorporated.
  • Add AP flour, almond flour, spices, baking powder, and baking soda.  Mix on low until a sticky dough forms.  Finally, add the oats and raisins.  NOTE: the dough will still be sticker than usual.  That's fine.
  • Drop tablespoon amounts of dough on the prepared baking sheets leaving enough space for the cookies to expand as they bake.
  • Bake for 12 minutes or until golden around the edges.  Remove and let set on the baking sheets for 2 minutes before carefully transferring to a cooling rack.
  • Leave to cool before serving or filling with cream if making oatmeal cream pies.  Enjoy!
