Ingredients
- 1/2 cup unsalted butter
- 3/4 cups white sugar
- 1/2 cup dark brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 3/4 cup AP flour
- 1/2 cup almond flour
- 1/4 teaspoon cardamom
- 1/2 teaspoon cinnamon
- Pinch of salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 cup old-fashioned rolled oats
- 3/4 cup raisins
Instructions
- Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper and set aside.
- In the bowl of your stand mixer, beat butter and sugars until smooth and whipped.
- Add eggs and vanilla. Beat again until well incorporated.
- Add AP flour, almond flour, spices, baking powder, and baking soda. Mix on low until a sticky dough forms. Finally, add the oats and raisins. NOTE: the dough will still be sticker than usual. That's fine.
- Drop tablespoon amounts of dough on the prepared baking sheets leaving enough space for the cookies to expand as they bake.
- Bake for 12 minutes or until golden around the edges. Remove and let set on the baking sheets for 2 minutes before carefully transferring to a cooling rack.
- Leave to cool before serving or filling with cream if making oatmeal cream pies. Enjoy!
