Ingredients

  • 1 cup AP flour
  • 1/4 cup sugar
  • 2 tablespoons baking powder
  • 1 large egg, separated
  • 1 cup whole milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla
  • Cinnamon Sugar (see instructions)
  • Strawberries, for topping
  • Blueberries, for topping

Instructions

For the cinnamon sugar:

  1. Combine ½ cup granulated sugar and ½ teaspoon cinnamon. Stir to combine and set aside.

For the waffles:

  1. In a small chilled metal bow, whisk egg white until stiff peaks form. Set aside.
  2. In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add the reserved egg yolk, milk, and melted butter. Whisk until smooth batter forms. Now fold in the whipped egg white until just incorporated.
  3. Heat your waffle maker, if you're using a mini waffle iron, place about two tablespoons of batter onto the griddle. Cook the waffles until they have risen and are golden. While they are still hot, sprinkle each waffle with the cinnamon sugar.
  4. Serve immediately with desired toppings. Enjoy!
