Crispy Fried Cauliflower Balls

Ingredients

Units Scale
  • 1 head of cauliflower - place in the food processor
  • 5 cloves of garlic - chopped fine
  • 1/2 cup of fresh Italian parsley - stems removed and chopped and loosely packed
  • 4 eggs
  • 4 slices of white bread - cubed
  • 1 cup of Italian style bread crumbs
  • 1 cup of grated Parmesan cheese or Romano cheese
  • 1 cup of flour
  • 1/2 cup of milk
  • 1 1/2 tsp. salt
  • 1 tsp. fresh ground black pepper
  • 1 tsp. of red pepper flakes
  • 1 tsp. dried oregano
  • 1/4 inch of Canola oil - for frying

Instructions

  1. Place the cauliflower florets in a food processor and process.
  2. Place the grated cheese, cubed bread, flour, bread crumbs, grated cheese, eggs, milk, garlic, chopped parsley and seasonings in a large bowl. Combine with the processed cauliflower.
  3. Place this mixture in a mix-master along with the paddle attachment and mix for a minute.
  4. Heat a large cast-iron frying pan with a quarter of an inch of canola oil.
  5. Form the cauliflower mixture into small balls and carefully place in the heated oil.
  6. When the balls turn a nice golden carefully turn, using two spoons, and let the balls turn golden on all sides.
  7. Place the cauliflower balls on a plate prepared with paper towels to let the paper towels absorb the excess oil.
  8. Serve with a tzatziki sauce, red marinara sauce or honey.
