Ingredients
- 1 3/4 cups flour - sifted
- 2/3 cup sugar
- 3 tsps. baking powder
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 1/3 cup unsalted butter, room temp
- 2 ripe bananas
- 2 eggs
- 1 cup pitted dates - chopped
- 1 cup walnuts - chopped
- Turbinado Sugar - for dusting
Instructions
- Preheat Oven 350 degrees F.
- Butter a 9 x 5 x 3-inch loaf pan
- Sift together the flour, sugar, baking powder, salt and baking soda.
- In a food processor combine the pitted dates and walnuts and process to small crumbs.
- Add the eggs, bananas, and butter and process once more to mix.
- Slowly add the sifted flour mixture to the food process and process a few times to mix together.
- Turn into the buttered loaf pan.
- Sprinkle the top of the bread with the Turbinado sugar.
- Bake 60 – 65 minutes or until the toothpick test comes out clean.
- Let cool in the pan on a wire rack for about 10 minutes then remove from the pan and let cool on a rack.
- Wrap in plastic wrap and then in foil to store.
