Spiced Apple Hand Pies

Ingredients

For the crust:

  • 2 cups flour
  • 2 tbs. sugar
  • 1/2 tsp. salt
  • 1/2 cup butter (8 tbs.)
  • 2 - 3 tbs. cold water

For the filling:

  • 3 apples - peeled and diced
  • Zest of 1 lemon
  • 1 tbs. vanilla
  • Zest of 1/2 orange
  • 3/4 cup sugar
  • 1 tsp. cinnamon
  • 1 cup walnuts - coarsely chopped
  • 1/2 cup dried cranberries or raisins - coarsely chopped
  • 3 tbs. flour
  • 1 egg - beaten with a splash of water
  • Turbinado sugar for sprinkling on top

Instructions

For the crust:

  1. Combine the flour, sugar, salt and butter in a food processor and process until the mixture becomes crumb-like. Add the cold water one tbs. at a time until the dough pulls together. Chill until ready to use.

For the filling:

  1. Preheat Oven 350 degrees F.
  2. Combine all of the ingredients for the filling in a bowl and toss.
  3. Roll out the dough to ¼ inch thickness and using a desired size jar cut out the dough.
  4. Using a tsp. place, the apple mixture in the center of half of the dough cut-outs. Use the remaining half of the dough cut-outs to fit on top of the dough with the filling and press into place along the edges with a fork.
  5. Brush the top of each hand pie with the egg wash and sprinkle with sugar.
  6. Bake 20 – 25 minutes or until lightly golden.
