Italian Meatball Subs

Ingredients

Units Scale
  • Fresh mozzarella
  • Fresh Heirloom Tomatoes, sliced
  • Fresh basil leaves
  • Fresh Italian bread

For the Sauce:

  • 4 - 5 vine ripe tomatoes - diced
  • 3 - 4 cloves garlic - chopped
  • Handful of fresh basil - chopped (about 1/4 cup)
  • Handful of Fresh Italian parsley - stems removed and chopped (about 1/4 cup)
  • 1 small red onion - sliced thin
  • 2 tbs. red wine
  • 1/4 cup fresh grated Parmesean cheese
  • 1/2 - 1 tsp. salt
  • 1/2 tsp. fresh ground black pepper
  • 1/4 tsp. red pepper flakes
  • 1/2 tsp. sugar
  • 2 tbs. olive oil

For the Meatballs:

  • 2 lbs. fresh ground beef
  • 2 eggs
  • 1/4 cup bread crumbs
  • 2 slices white bread - crumbled
  • 3 - 4 tbs. fresh chopped Italian parsley - stems removed
  • 3 - 4 tbs. fresh basil - chopped
  • 1/4 cup milk
  • 1 tsp. salt
  • 1 tsp. fresh ground black pepper
  • 1/4 tsp. red pepper flakes
  • 1 tsp. dried oregano
  • 1/4 tsp. fennel seeds - if desired
  • 1/4 cup fresh grated Romano cheese
  • Olive oil for drizzling

Instructions

For the Sauce:

  1. Heat a large cast iron frying pan. Place the tomatoes in a dry pan, sprinkle with fresh sea salt and let the tomatoes simmer.
  2. Gently, cook down the tomatoes, about 5 - 6 minutes or so.
  3. Add the olive oil, sliced onion, chopped garlic, fresh herbs, and seasonings and gently simmer for 3 - 5 minutes.
  4. Add the wine and the cheese and and continue to gently simmer for another 3 - 4 minutes.
  5. Taste for seasonings. Turn the heat off.

For the Meatballs:

  1. Combine all of the ingredients in a large bowl; add a small drizzle of olive oil and mix with your clean hands.
  2. Form the meatballs into desired size, keeping in mind, the smaller the meatball the quicker it will cook.
  3. Heat a large cast iron frying pan with a drizzle of olive oil.
  4. Place the meatballs in the prepared heated pan, Do Not Over Crowd the pan, and let saute until a nice golden char is formed on each side of the meatball. The cooking time should take about 10 - 12 minutes.
  5. The cooking time depends on the size of the meatballs the larger the meatballs the longer the cooking time.The meatball will continue to cook as the sauce simmers gently.
  6. Gently lift the meatballs from the pan and place in the sauce.
  7. Gently simmer on a low heat for 15 - 20 minutes or so.

Assembly:

  1. Slice bread down the middle and place meatballs on the bread - sliced or whole. Next Place fresh sliced tomatoes, fresh basil leaves, and fresh sliced mozzarella.
  2. Drizzle extra sauce over subs and serve!
