Grilled Shrimp and Gremolata

Ingredients

Units Scale
  • 2 lbs. of large shrimp - peeled and deveined
  • Skewers soaked in water

Marinade for the shrimp:

  • 2 tsp. ground black pepper
  • 2 tsp. coarse salt
  • 2 tsp. dried oregano
  • 1/2 tsp. paprika
  • Juice of 2 large lemons
  • 4 - 5 cloves of fresh garlic - grated
  • 1/4 cup olive oil

For the Herbed Gremolata:

  • 1 head of Italian parsley - cleaned, stems removed and pat dry.
  • Handful of fresh basil leaves
  • 3 - 4 cloves of fresh garlic
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1/4 cup of grated Romano cheese
  • 2 - 3 tbs. honey
  • Juice of 1/2 large lemon
  • 1/4 cup of olive oil

Instructions

For the Shrimp:

  1. Whisk all the ingredients for the marinade in a bowl.
  2. Add the shrimp and toss.
  3. Thread the shrimp onto the skewers. Place the rest of the marinade over the shrimp.
  4. Refrigerate until ready to grill.
  5. Cook time should take about 5 minutes, turning once.

For the Gremolata:

  1. Combine all the ingredients for the Gremolata in a food processor and process until the desired consistency is achieved.
