Ingredients
- 2 lbs. of large shrimp - peeled and deveined
- Skewers soaked in water
Marinade for the shrimp:
- 2 tsp. ground black pepper
- 2 tsp. coarse salt
- 2 tsp. dried oregano
- 1/2 tsp. paprika
- Juice of 2 large lemons
- 4 - 5 cloves of fresh garlic - grated
- 1/4 cup olive oil
For the Herbed Gremolata:
- 1 head of Italian parsley - cleaned, stems removed and pat dry.
- Handful of fresh basil leaves
- 3 - 4 cloves of fresh garlic
- 1/2 tsp. red pepper flakes
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 1/4 cup of grated Romano cheese
- 2 - 3 tbs. honey
- Juice of 1/2 large lemon
- 1/4 cup of olive oil
Instructions
For the Shrimp:
- Whisk all the ingredients for the marinade in a bowl.
- Add the shrimp and toss.
- Thread the shrimp onto the skewers. Place the rest of the marinade over the shrimp.
- Refrigerate until ready to grill.
- Cook time should take about 5 minutes, turning once.
For the Gremolata:
- Combine all the ingredients for the Gremolata in a food processor and process until the desired consistency is achieved.
- Prep Time: 15 minutes
