Southwest Style Seasoned Fries Lasagna

Ingredients

  • 29 oz. can of black beans - rinsed and drained
  • 1 large sweet onion - sliced thin
  • 1 bag of McCain Seasoned Waffle Fries
  • 1/4 cup of fresh cilantro - chopped
  • 1 large tomato - diced
  • 1 large jalapeño - sliced thin
  • 1 tsp. ground cumin
  • 1/2 tsp. chili powder
  • 8 oz. of mozzarella - sliced thin
  • 1 cup of sour cream and more for garnish
  • 2 tbs. olive oil
  • Your favorite salsa - for garnish
  • Avocado - for garnish
  • Lime wedges - for garnish

Instructions

  1. Preheat oven to 425 degrees F. and prepare the McCain Seasoned Waffle Fries as directed then set aside.
  2. Lower the oven temperature to 350 degrees F.
  3. Heat a large heavy cast iron pan with the olive oil. Add the onion and sauté for 2 to 3 minutes; add the tomato, jalapeño, beans, cilantro and seasonings. Continue to gently sauté for another 8 – 10 minutes.
  4. Arrange the bottom of a casserole dish with the baked waffle fries. Using a slotted spoon top the fries with the bean mixture followed by sliced mozzarella cheese. Repeat this process to the top of the dish.
  5. Finish the dish off by spooning the sour cream around the edge of the dish.
  6. Bake for 25 – 30 minutes.
  7. Serve with sliced avocado a lime wedge and your favorite salsa.
