Ingredients
- 29 oz. can of black beans - rinsed and drained
- 1 large sweet onion - sliced thin
- 1 bag of McCain Seasoned Waffle Fries
- 1/4 cup of fresh cilantro - chopped
- 1 large tomato - diced
- 1 large jalapeño - sliced thin
- 1 tsp. ground cumin
- 1/2 tsp. chili powder
- 8 oz. of mozzarella - sliced thin
- 1 cup of sour cream and more for garnish
- 2 tbs. olive oil
- Your favorite salsa - for garnish
- Avocado - for garnish
- Lime wedges - for garnish
Instructions
- Preheat oven to 425 degrees F. and prepare the McCain Seasoned Waffle Fries as directed then set aside.
- Lower the oven temperature to 350 degrees F.
- Heat a large heavy cast iron pan with the olive oil. Add the onion and sauté for 2 to 3 minutes; add the tomato, jalapeño, beans, cilantro and seasonings. Continue to gently sauté for another 8 – 10 minutes.
- Arrange the bottom of a casserole dish with the baked waffle fries. Using a slotted spoon top the fries with the bean mixture followed by sliced mozzarella cheese. Repeat this process to the top of the dish.
- Finish the dish off by spooning the sour cream around the edge of the dish.
- Bake for 25 – 30 minutes.
- Serve with sliced avocado a lime wedge and your favorite salsa.
