Ingredients
- 2 1/4 cups spelt flour
- 4 tbs. butter - softened
- 3/4 cup sugar
- 1/3 cup sour cream
- 2 eggs
- 1 tsp. vanilla
- 2 1/2 tsp. baking powder
- 1/2 cup milk
- 1/4 tsp. salt
- 1 cup dried cherries - chopped
- Zest of 1/2 lemon
- Powdered sugar for dusting
For the Streusel:
- 4 tbs. butter
- 1/4 cup all-purpose flour
- 2 tbs. brown sugar
- 1/4 cup oats
- 1/4 tsp. cinnamon
- 1/4 cup sliced almonds
- 2 tbs. sugar
Instructions
- In a large bowl combine the butter, all-purpose flour, brown sugar, oats, cinnamon, sliced almonds and sugar.
- Crumble the mixture and top each muffin evenly with the mixture. Preheat Oven 350 degrees F.
- In a large bowl combine the spelt flour, sugar, baking powder, salt and lemon zest.
- In a separate bowl combine the butter, milk, sour cream, eggs and vanilla and mix together with an electric mixer.
- Pour the wet ingredients into the dry ingredients, add the chopped dried cherries and mix.
- Prepare the muffin tins.
- Fill the tins evenly with the batter and top each muffin with the streusel mixture.
- Bake 15 – 18 minutes or until the toothpick test comes out clean.
- Allow the muffins to cool and then dust with powdered sugar before serving.
