Spelt Cherry Muffins

Ingredients

Units Scale
  • 2 1/4 cups spelt flour
  • 4 tbs. butter - softened
  • 3/4 cup sugar
  • 1/3 cup sour cream
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/2 tsp. baking powder
  • 1/2 cup milk
  • 1/4 tsp. salt
  • 1 cup dried cherries - chopped
  • Zest of 1/2 lemon
  • Powdered sugar for dusting

For the Streusel:

  • 4 tbs. butter
  • 1/4 cup all-purpose flour
  • 2 tbs. brown sugar
  • 1/4 cup oats
  • 1/4 tsp. cinnamon
  • 1/4 cup sliced almonds
  • 2 tbs. sugar

Instructions

  1. In a large bowl combine the butter, all-purpose flour, brown sugar, oats, cinnamon, sliced almonds and sugar.
  2. Crumble the mixture and top each muffin evenly with the mixture. Preheat Oven 350 degrees F.
  3. In a large bowl combine the spelt flour, sugar, baking powder, salt and lemon zest.
  4. In a separate bowl combine the butter, milk, sour cream, eggs and vanilla and mix together with an electric mixer.
  5. Pour the wet ingredients into the dry ingredients, add the chopped dried cherries and mix.
  6. Prepare the muffin tins.
  7. Fill the tins evenly with the batter and top each muffin with the streusel mixture.
  8. Bake 15 – 18 minutes or until the toothpick test comes out clean.
  9. Allow the muffins to cool and then dust with powdered sugar before serving.
