Ingredients

Sweet Potato Wedges:

  • 3 large sweet potatoes - with skin - sliced into 1/4 inch thick wedges
  • Canola oil - 1/4 inch in a large skillet
  • Fresh ground sea salt
  • Fresh ground black pepper

For the Honey, Cilantro and Lime Dipping Sauce:

  • 3 - 4 tbs. honey
  • Juice of 1/2 lime
  • 1 tbs. of fresh Cilantro - chopped
  • Small dash of fresh ground salt
  • Small dash of fresh ground black pepper

Instructions

Sweet Potato Wedges:

  1. Heat a large heavy cast iron skillet with the canola oil.
  2. Place the sweet potato wedges in the pan, Do Not Overcrowd the pan.
  3. Cook for two to three minutes on one side, until a nice golden color appears, then turn over and finish cooking for another two to three minutes on the other side and a nice golden color appears.
  4. Place the wedges on a plate prepared with a paper towel to absorb any excess oil.
  5. Season with fresh ground sea salt and fresh ground black pepper.

For the Honey, Cilantro and Lime Dipping Sauce:

  1. In a small bowl combine the honey, lime juice, cilantro, salt, black pepper and stir.
