Fava Bean and Tomato Crostini

Ingredients

Units Scale
  • 1 fresh baguette

For Fava Beans:

  • 1 cup of fava beans
  • 3 - 4 tbs. grated Parmesan cheese
  • 4 tbs. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. red pepper flakes

For the Tomatoes:

  • 1 pint of grape tomatoes
  • 1 cloves of garlic
  • 2 tbs. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. red pepper flakes
  • 1 tbs. balsamic vinegar
  • 2 tbs. lemon juice
  • 1/4 cup fresh basil leaves

Instructions

For Fava Beans:

  1. Bring the fava beans to a quick boil; drain and place in cool water.
  2. Remove the beans from their shell and place in a food processor with the grated cheese, olive oil, salt, pepper, red pepper flakes, balsamic vinegar, lemon juice and fresh basil leaves.
  3. Give a few good chops to this mixture then refrigerate while preparing the tomatoes.

For the Tomatoes:

  1. Preheat Oven 350 degrees F.
  2. Place the tomatoes on a baking sheet and bake for 10 – 12 minutes.
  3. Remove from the oven and let cool.
  4. Place the cooled tomatoes in a food processor with the garlic, salt, pepper, red pepper flakes and olive oil. Give this mixture a few good chops.
  5. Slice the bread approximately one inch thick and place on a baking sheet with a drizzle of olive oil.
  6. Bake 5 – 6 minutes; then remove from oven.
  7. Place a spoonful of fava bean mixture on each slice of bread, top with the tomatoes, fresh grated parmesan cheese and an extra drizzle of olive oil.
