Easy Cinnamon Rolls {with cakemix}

Description

If you do not have Cinnamon Bun Cake Mix on hand or cannot find it, substitute with 1 cup vanilla or white cake mix and 1 teaspoon cinnamon.

Cinnamon Rolls:

  • 1 cup (1/2 package) Pillsbury Cinnamon Bun Cake Mix
  • 11/2 cups all-purpose flour
  • 1 package yeast
  • 3 tablespoons sugar
  • 1/2 cup warm milk
  • 1 egg

Filling:

  • 3 tablespoons softened butter
  • 1 teaspoon cinnamon
  • 1/4 cup sugar

Glaze:

  • 1 cup confectioner's sugar
  • 1 tablespoon maple syrup
  • 2-3 tablespoons milk

Instructions

  1. Preheat oven to the lowest setting, in my case 170 degrees F. Take an oven proof bowl, grease it and let it warm with the oven. Once the oven reaches the desired temperature, turn off.
  2. In a large bowl, whisk together cake mix, flour, yeast and sugar. Set aside.
  3. Warm milk just until it's lukewarm - warm to the touch not hot.
  4. Make a well in the center of the dry ingredients and add the egg. Mix until crumbly, then add warm milk. If the mixture is too sticky, add 1/4 cup of flour until the dough becomes soft and pliable.
  5. Transfer the dough the greased bowl, cover and let sit in the oven until it has doubled. This may take about 11/2 - 2 hours.
  6. In the meantime, mix cinnamon and sugar.
  7. Once the dough has risen, remove of the oven and turn over onto a well-floured work surface. (you may have to preheat your oven to 170 degrees again to warm the oven for the second rising. Don't forget to turn it off once it heats up). Knead the dough for several minutes. Roll it out into a rectangle about 1/4-inch thick. Spread softened butter all over the dough, then sprinkle with cinnamon sugar.
  8. Roll the dough up tightly and cut into 10 rolls. Carefully place each roll into a pie plate cover and return to the oven until the dough has puffed up and filled out.
  9. Remove the rolls from the oven while you preheat the oven to 350 degrees for baking. Bake for about 25 minutes or until the rolls are golden around the edges. Remove and let cool completely on a cooling rack.
  10. Whisk together confectioner's sugar, maple syrup and milk for the glaze and drizzle liberally over all the rolls. Let the glaze set before servings.
