Ingredients
For the Spinach:
- 2 bunches of fresh spinach
- 4 cloves of garlic
- 1/4 tsp. salt
- 1/4 tsp. red pepper flakes
- 2 tbs. olive oil
For the Dip:
- Drained spinach
- 4 oz. gorgonzola cheese
- 1/4 cup parmesan cheese
- Juice of 1/4 of a lemon
- 1/4 tsp. red pepper flakes
- 1 clove of garlic
- 1 tbs. honey
- 1 tbs. olive oil
Instructions
For the Spinach:
- Clean spinach and pat dry. Toss the garlic with the spinach.
- Heat a large frying pan with the olive oil and carefully add the spinach and garlic.
- Add the salt and red pepper flakes and toss until lightly wilted.
- Remove from the heat and place in a colander over a bowl to drain.
For the Dip:
- Place all of the above in a food processor and process until desired consistency.
- Serve with your favorite crackers or veggies.
