Tuna Salad w/ Buckwheat & Raisins

I hope everyone had a wonderful Christmas.  I feel like Christmas went by way too fast and while some, maybe most, are relieved, I am a little sad.  I was really into it this year...I'm still listening to my holiday playlist :3

After cleaning out the house of all those holiday guilty pleasures, it's nice to get back into a healthful groove, starting with this light, refreshing, but oh so delicious tuna salad, inspired by Livin' Lean with Trader Joe's by Jamie Davidson, M.S.

Trader Joe's has become one of the best go-to places for people who want to find healthy and reasonably priced food..  I especially love their coffee.  It's been a pleasure to review their cookbook today.  These easy to prepare and wholesome recipes are perfect for getting back on track after the holidays.

Tuna Salad w/ Buckwheat & Raisins

Salad:

10 oz. solid white tuna in water
1 stalk celery, chopped
1/4 red onion, chopped
1/8 cup raisins, chipped
1/2 cup instant buckwheat barley
1 tablespoon fresh ginger, grated

Dressing:

Juice of 1/2  lemon
1 tablespoon soy sauce
1/2 teaspoon teriyaki sauce
Juice of 1/4  orange
1 teaspoon vinegar

Toast (optional)

In a large bowl combine all the ingredients for the tuna salad.

In a small cup mix the ingredients for a dressing.  Pour dressing over tuna salad and toss. Serve over toast or with your favorite crackers.

Recently my Mom was nominated for the Sunshine Award and my friend Mary Frances was sweet enough to nominate me this time around.
Now, I'm going to deviate a bit since LTG already chose 10 wonderful foodie bloggers to receive this award, but I will answer the questions because I always find it fun to get to know the face behind the recipes 🙂
What is your #1 indulgence?
A Caramel Frap…unless it's Autumn, then I'm all about the Pumpkin Spice Latte 😀
What makes you happiest?
When things go better than planned.
What is the most important thing in a person?
Honesty and Kindness.
Are you a morning or night person?
I look forward to morning coffee, but honestly I like the night.
What is your biggest pet peeve?
Busybodies who don't know when to take a hint…or just don't want to.
What are your childhood memories associated with Christmas baking?
Baking cookies with my mom and brother listening to holiday music.
Describe your fashion sense in one word.
Whatever is on sale...haha!! That was more than one word.

What would be your perfect afternoon?
Wandering through a bookstore for hours with a cup of coffee (never without my caffeine xD)
What is a habit you want to get rid of?
Overthinking everything…Does that count?…I just feel like I have a habit of worrying way too much which makes things worse.
What is a hobby you'd like to try?
Surfing. Cowabunga baby! (I know that was cheesy)
What is a trend you would start?
Bring back the vinyl and put down the digital books.

    I too, am so sad Christmas is over. I hate saying goodbye to family! Oh well, that is what makes the holiday special. I made tuna salad for the first time in years last week and am now hooked! Wil definitely be trying this version! All those add ins not only make it healthier, but tastier!. Thumbs up! Loved all your answers, especially the book store (with a caramel frap - all the way!) xx Mary Frances

    I frequently top my tuna salad with dried cranberries. I imagine that raisins add a similar twist. I'm intrigued about the barley, though!

    Tammy, Looks truly healthy! My wife would really like this meal...but first we have to finish some Christmas cookies and pie. Also leftover turkey and rib roast... Back to the gym though! Take Care, Big Daddy Dave

    Looks like we did the very same thing. Our house is void of all Christmas goodies. It's time to eat more healthy meals. This sounds very good too. Tuna is a favorite of mine.
